Instant Pot Reuben Soup I adore a tasty Reuben and I love a hearty soup! So I married my two favorites and created this easy Instant Pot Reuben Soup! It is "National 'Eat Like an Irishman' Day" on March 17th and this would be a great recipe to celebrate with! You could also make this Reuben Soup...

Number Of Ingredients 9

1 (8oz) package cream cheese, softened (Kite Hill cream cheese if dairy free)
2½ cups (or 1 box Kettle and Fire) Beef Broth
¼ cup minced onion
1½ cups sauerkraut
1 cup finely grated Swiss cheese (omit if dairy free)
2 cups corned beef, sliced into thin strips (to resemble noodles)
1 teaspoon fine grain sea salt
½ teaspoon fresh ground pepper
Garnish with fresh oregano sprigs

Steps:

  • Place the cream cheese and broth into a 6 quart Instant Pot. Use a whisk to combine well. Add the rest of the ingredients. Close the lid tightly and close the vent. Press "SOUP".
  • Once the timer goes off, release the pressure naturally, using NPR. It may take 20 minutes for the vent to open. Serve garnished with fresh oregano sprigs.
