Steps:
- 1. season the chicken with salt and pepper. heat butter in a skillet. Cook the chicken in the butter for about 20 minutes until no longer pink. Remove chicken and set aside and keep warm.
- 2. Add the shallots, garlic, and mushrooms to the pan and cook about 4 minutes. Season with salt and pepper. Pour in the wine and cook over high heat another 4 minutes. Add the beef stock and tomato paste. Mix well. Mix the cornstarch and water together
- 3. Bring the liquid to a boil and pour in the cornstarch mixture. Mix well. Add the parsley and tarragon. Add the chicken back in and cook for 5 more minutes.
