Hungarian Goulash with Pork Tenderloin image

Number Of Ingredients 18

1 cloves garlic clove
2 teaspoons kosher salt
3/4 teaspoons caraway seeds (divided)
1/4 teaspoons ground pepper
1 tablespoon olive oil
1 pound pork tenderloin - cut into 1 inch cubes
1 onion - coursely chopped
2 bacon slices - finely diced
1 3/4 cup water
1 can chopped tomato - 14.5 oz
1 tablespoon sweet paprika
3/4 cups good beer (Lawsons)
1/4 teaspoon crushed red pepper
3 jalapenos
12 ounces egg noodles
1 tablespoon butter
6 tablespoons sour cream
1 1/2 tablespoons flour

Steps:

  • Mash garlic with the back of a knife. Place it in a small bowl. Add 1/4 teaspoon salt, 1/4 teaspoon caraway seeds, crushed pepper. Continue to mash as it softens.
  • Sprinkle pork tenderloin in salt and pepper. Heat oil in a large pot or dutch oven over medium high heat. Brown pork tenderloin on all sides.
  • Remove pork from pot. Add onion, bacon, and jalapenos and cook until bacon is crispo - about 7 mins
  • Add garlic mixture to pot. Sautee 1 minute.
  • Add flour and stir to combine thoroughly.
  • Add water, paprika and beer. Bring to a boil and then reduce heat and simmer for 30 minutes.
  • Add crushed red pepper. Simmer an additional 15 minutes.
  • Add pork. Simmer 15 minutes.
  • Cook noodles according to package directions. Drain and add butter and 1/4 teaspoon caraway seeds.
  • Serve pork over noodles. Eat and enjoy.
