HOT ROAST BEEF PARTY SANDWICHES image

1/2 c finely chopped walnuts
2 (9.25 oz) pkg dinner rolls (Sara Lee Classic from bread aisle, or try firmer, flavorful bread
2/3 c peach preserves
1/2 c mustard-mayo blend
3/4 lb finely sliced deli roast beef-chopped or not chopped
1/2 lb thinly sliced Havarti cheese (optional with dill)
salt and pepper

Steps:

  • 1.Preheat oven 325. 2. Toast walnuts in nonstick pan, 5-6 min. 3. Remove rolls from package but do not separate. Cut rolls horizontally, creating large top and large bottom pieces. Spread preserves on top roll; sprinkle with walnuts. Spread mayo blend on bottom half; top with beef and cheese. Salt & pepper. 4. Assemble sandwich and wrap in foil. Bake 30 minutes until cheese is melted. Slice into triangles. 5. To make ahead, prepare up to point of baking and freeze up to one month. Thaw overnight in fridge, and bake as directed.
