HONEY-YOGURT PARFAITS image

Yield 6 parfaits

Number Of Ingredients 9

1 1/2 tsp cornstarch
1/4 tsp salt
1/2 cup honey
3 Tbsp lemon juice
2 beaten egg yolks
1- 8oz yogurt (lemon, orange, peach, pineapple or plain)
1 cup whipping cream
granola (or wheat germ)
fresh fruit cut to bite-size

Steps:

  • In saucepan, combine corn starch, salt, honey & lemon juice. Cook & stir until thickened & bubbly. Cook & stir 2 mins more (it does not thicken very much!). Gradually stir 1/2 of hot mixture into beaten egg yolks, then return to remaining hot mixture in saucepan. Heat to gentle boil; cook & stir 2 mins. Remove from heat. Blend hot mixture into yogurt. Cool stirring occasionally (can put in fridge). Whip cream to soft peaks & tips curl over. Fold into yogurt mixture. Chill. To assemble parfaits: layer yogurt mixture, granola, fruit in sherbet or parfait glasses ending with granola. Garnish with fresh mint leaves if desired.
