My cousin loves apricot, so when I saw this recipe in an old cookbook that my great aunt gave me that was compiled for her local high school homecoming reunion, I thought of her, and it sounded so good I thought I would share. Number Of Ingredients 10

1 1/2 c flour
2/3 c brown sugar, firmly packed
2 1/2 tsp baking powder
1/2 tsp salt
1 egg, slightly beaten
1 c skim milk
1/4 c orange honey
2 Tbsp butter, melted
1 c post natural bran flakes
1 c dried apricots, finely chopped

Steps:

  • 1. Heat oven to 350 degrees. Mix flour, sugar, baking powder and salt. In a seperate bowl, mix egg, milk, honey and butter. Add to flour mixture and stir just until moistened. Stir in cereal and apricots. Pour into a 8x4 inch loaf pan that has been sprayed with non-stick cooking spray. Bake 55 to 60 minutes, or until toothpick inserted into center comes out clean. Let cool 10 minutes and then remove from pan.
