Hominy and Corn Casserole image

This is an easy side dish that has a little unexpected twist with the green chilies. My family always requests it for holiday dinners.

Number Of Ingredients 8

2 can(s) white hominy, drained
2 can(s) yellow corn kernels, drained
1 can(s) 4 oz chopped green chilies
1 Tbsp corn starch
8 oz sour cream
1 c shredded monterey jack cheese
1 1/2 c shredded cheddar cheese
salt and pepper

Steps:

  • 1. Preheat oven to 350
  • 2. Combine everything except the cheeses.
  • 3. Spoon 1/2 into a greased casserole dish.
  • 4. Mix the cheeses and sprinkle 1/2 over the mixture.
  • 5. Repeat the layers.
  • 6. Cover. Bake at 350 for 40 minutes or until bubbling all through. Remove cover for 5 minutes and let the cheese brown a little.
