Steps:
- 1. Chop rhubarb into crescents
- 2. Peel one orange leaving on the white pith
- 3. Slice the second orange. Cut the slices in half to form crescents.
- 4. Add peel and pith of one orange, chopped rhubarb, orange juice and sugar to a pot.
- 5. Heat on the lowest setting on your stove.
- 6. When the mixture is warm, add the vodka and simmer for an additional 20 minutes.
- 7. Stir to make sure that sugar is dissolved and to ensure that mixture doesn't get too hot. You don't want steam.
- 8. After 20 minutes, remove mixture from heat and strain.
- 9. Refrigerate until chilled.
- 10. Add ice to glass.
- 11. Add sparkling wine, club soda and 3 ounces of the orange rhubarb mix to the glass.
- 12. Garnish with an orange wedge and serve.
