Home Made Grape Juice- Mom's Recipe image

Mom made this lovely light grape juice every year. It is so much better than that thick, heavy, overly sweet stuff they sell in the grocery stores. This is a very simple recipe using basic canning skills.

1 cup(s) fresh concord grapes
3/4 cup(s) sugar (you can vary sugar from 1/2 to 1 full cup depending on your taste)
- you may substitute splenda for sugar if you prefer.
- fresh boiling water

Steps:

  • Wash and sterilize QUART canning jars, lids, and rings. Fill water bath pan halfway with water to boil. At the same time, fill another pan with water and bring to a boil for the juice. Wash grapes and remove stems and any damaged fruit. Measure 1 cup of grapes and 3/4 cup of sugar for each quart jar. Add sugar and grapes to jar. Don't bother mixing-it will mix when processing. Fill the jar the rest of the way with boiling water. Leave 1/2 inch headspace. Wipe jar top to clean. Screw on rings and lids fairly tight. Place jars in water bath canner. Add boiling water to cover jars. Process 25 minutes. Remove jars and place on rack or towel to cool. As you can see in the picture, the grapes may or may not float. Either way, the taste will be the same. This juice needs to sit in jars for at least 2 weeks and preferably at least 4 weeks before using so the flavor can develop. NOTE: Color of juice will depend on the grape skins and will develop over time.
