HEIRLOOM TOMATO SALAD CRISPED CAPERS image

1/4 c. plus 1 t. olive oil
1 T. capers drained
3 lb.s mixed heirloom tomatoes, cut into 1/2" wedges
2 T. fresh basil chiffonade
Sea salt ground pepper

Steps:

  • Heat 1 t. of oil in a small saute pan over medium high heat. Add capers and cook until crisp, 1 to 2 minutes. Remove to paper towel. Place tomatoes in a large bowl. Drizzle with the remaining 1/4 c. oil, add basil, season with salt and pepper to taste and gently toss to coat. Sprinkle capers on salads after they're plated so that they stay crisp.
