This recipe come from a 1920's cookbook. It's really good with fresh apples. Since this is apple season I thought you could use this great cake. I use Honey Crisp Apples when in season. 2 1/2 cups all purpose flour
1 1/2 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
1/2 cup vegetable oil
*2 1/2 cups applesauce
2 lg. eggs
1 cup finely chopped walnuts (optional)
*i take 4 large fresh unpeeled apples and 1/8 cup sugar in a food processor to make a chunky consistancy fresh applesauce

Steps:

  • 1. Preheat oven 350 degrees. Grease a 9x13 baking pan. In large bowl SIFT flour, sugar, salt, baking soda baking powder,and cinnamon. In another bowl, mix with a mixer the oil, apple sauce and eggs. Pour mixture in the dry ingredients and mix with mixer until blended. Add nuts and stir. Pour into prepared pan. Bake 35 minutes. Cool and serve plain or with a very light dusting of powdered sugar.
