Healthy taco foldovers image

These are great for a light lunch. So easy to make too. I got the original recipe from Pilsbury, but changed it up a bit to make it healthier.

Number Of Ingredients 10

1/2 pound(s) ground turkey breast
1/4 cup(s) chopped onion
1/2 cup(s) black beans, drained
1 - 8 oz can tomato sauce
1 tablespoon(s) taco seasoning
1 - 10.2 oz can pillsbury grands flaky layers biscuits
1 cup(s) reduced-fat, shredded mexican-blend cheese
5 tablespoon(s) favorite salsa
5 tablespoon(s) light sour cream
- sliced green onion for garnish

Steps:

  • Heat oven to 325. Lightly spray a cookie sheet w/ cooking spray. In lg skillet over med-high heat, cook ground turkey and onion until turkey is browned.
  • Stir in beans, tomato sauce and taco seasoning. Simmer 5 mins, stirring occasionally. Separate dough into 5 biscuits. Press each biscuit into a 5" round disc.
  • Spoon 1/2 the turkey mix onto center of each biscuit. Sprinkle cheese evenly over each biscuit. Fold 1/2 the biscuit over filling, pressing edges w/ fork to seal. Place biscuits on cookie sheet. Bake 12-15 mins or until golden brown. Top w/ salsa, sour cream and garnish w/ green onions.
