Serves: 8 sandwiches
INGREDIENTS::
MARINATED CABBAGE:
4 c. cabbage (thinly sliced)
2 Tbsp. white vinegar
1 Tbsp. granulated sugar
4 c. hickory smoking chips
SPICE RUB:
¼ Tsp. cayenne
½ Tsp. thyme
2 Tsp. cracked black pepper
2 Tbsp. kosher salt
½ Tsp. ground sage
½ Tsp. paprika
½ Tsp. onion powder
VEGETABLE OIL:
1 (about 3-4 lbs) pork loin roast, boneless
SAUCE:
¼ Tsp. coarse ground black pepper
¼ Tsp. salt
1 c. white vinegar
2 15-oz cans of tomato puree
½ Tsp liquid hickory smoke
2 Tbsp. vegetable oil
¾ c. brown sugar
½ onion powder
1 minced clove garlic
8 Kaiser Rolls

Steps:

  • PROCEDURE:
  • As mentioned, you should marinate the cabbage at least 24 hours before making the sandwiches. Like the Hard Rock Café's famous coleslaw, it will take some time before the flavors will fully develop inside the refrigerator. To marinate the cabbage, mix sugar and vinegar in a medium-sized bowl. Put in the cabbage, toss it well then cover it. Store the marinated cabbage in the fridge for about 24 hours before making the sandwiches.
  • Get another bowl and place the wood chips there then cover it with water. Allow the wood to be soaked in the water for no less than an hour. After soaking the wood chips, arrange them in the region of the inside edge of the grill. Remember; do not put the coals directly beneath the pork. After heating the coals, remove the water from the wood chips by draining them. Then, put the wood chips on top of the coals. At this point, your coal should be smoking.
  • In a small-sized bowl, mix the spice rub ingredients. Mix thoroughly.
  • On the pork roast surface, put some vegetable oil. Then, sprinkle all the spices on the entire roast's surface.
  • Once the coals are ready, put the pork roast at the middle of the grill. Place a lid on top of it. Allow the pork to cook for about 3 to 4 hours. Or, you can also wait for the roast's internal temperature to reach 175-180 degrees Fahrenheit.
  • While waiting for the pork to be cooked, start making the sauce by mixing the ingredients in a medium-sized saucepan. Make sure the saucepan is heated over medium or low heat. Allow the sauce to simmer for about 15-20 minutes. Cover the sauce then take it off the heat. Set the sauce aside until the pork is cooked.
  • Once the pork is cooked, take it off the grill. Allow the pork to sit for about 15-20 minutes until it is cool or until you can touch it. Afterwards, tear the pork along its grain creating shredded pork in bite-size strips pieces.
  • Get another large saucepan. Preheat the sauce over medium heat. Place the shredded pork in the saucepan then add the sauce (about 2 cups). Stir well. Allow it the pork to be cooked for about 15 minutes. Set aside the remaining sauce. You will use it when serving the dish.
  • Get the Kaiser Rolls. Grill the rolls' faces. Afterwards, start making the sandwiches by stacking about a cup of the pork at the bottom half of the rolls. Then, put about a tablespoon of your marinated cabbage over the pork. Add about one tablespoon of the remaining sauce on top of the marinated cabbage. Top it off with the top half of each roll and serve. You may also serve this delicious sandwich together with Hard Rock Café's baked beans and coleslaw as side dish.
