Ham & Potato Soup image

2 c country ham
1 c celery, chopped
2 c carrots, diced
1/2 c onion, diced
4 clove garlic, finely chopped
5 medium potatoes, cut into large bite size pcs.
4 c chicken stock, homemade or low-sodium
1 tsp thyme
1 tsp black pepper
1/4 c masa for thickening
6 slice american cheese, opt

Steps:

  • 1. Place onion, celery, carrots, garlic and ham in large soup pot with about 1 tbls of olive oil. Simmer till veggies are tender. If using leftover ham, add once veggies are tender.
  • 2. Add chicken stock to pot and spices bring to a boil, reduce heat and add potatoes. Cook on a low boil for about 20-30 min till potatoes are tender.
  • 3. Once potatoes are tender reduce heat to warm. Add cheese if desired. Mix 1/4 c. of masa to 1 c. of hot liquid from soup and mix well to remove lumps. REturn back to soup and mix in to thicken broth.
