I've tweaked this old church recipe over the years. Hearty and can be used as cold or hot cereal. To make flavored oatmeal add a 1/2 cup of water per 1/2 cup of granola and microwave. Number Of Ingredients 8

6 c oats- regular or quick (prefer regular)
1/2 c honey
1/2 c brown sugar
2 tsp vanilla extract
2 stick butter or margarine (prefer butter)
2 c coconut (optional but good!)
2 c chopped or sliced nuts-any kind (optional but good!)
2 c dried fruits- i use raisins, pineapple, craisins- be creative!

Steps:

  • 1. Melt butter -add brown sugar and vanilla. Stir.
  • 2. Combine oats, coconut and nuts in large baking pan. (I always double my batches so I use my large roasting pan.)
  • 3. Pour and mix the butter mixture into the oats. Mix until there are no dry spots on the oats. Bake at 300 degrees for 45 mins, stirring every 15 mins.
  • 4. Baked granola should have some golden spots but not be so dry that it won't clump. Remove from oven and mix in dried fruits. Immediately put warm granola into mason jars or large jar for storage. Allow to cool without lid. When cool you can break up. Should be moist and crunchy. Store in airtight container.
