Steps:
- 1. Preheat oven to 375 degrees. Lightly butter a shallow 3 quart casserole and set aside.
- 2. In a medium saucepan, combine sweet potatoes with water to cover. Bring to a boil over medium-high heat. Reduce heat, partially cover, and simmer for 10 minutes, just until tender. Drain well and set aside.
- 3. Core apples (do not peel) and slice crosswise into 1/2" slices. Arrange sweet potatoes over bottom of prepared casserole. Cover with apple slices. Evenly distribute ham pieces and onion over apples.
- 4. In a small bowl, mix cider, melted butter, brown sugar, maple syrup, lemon juice, raisins, cinnamon, and allspice. Spoon mixture evenly over casserole.
- 5. TO MAKE TOPPING: In a small bowl, combine cornflakes, melted butter, and paprika. Sprinkle evenly over top of casserole. Bake, uncovered, for 40 to 50 minutes, until top is crispy. Serve right away.
