Ham and Black Bean Soup image

This makes a huge pot of warm and comforting soup. The smoky pork broth is so delicious.

FOR THE BROTH
12 c chicken stock
2 Tbsp better than bouillon chicken bouillon
2 ham hocks
1 Tbsp olive oil
1 red onion chopped
1/2 c dry red wine
6 clove garlic minced
2 bay leaves
2 sprig(s) rosemary
4 sprig(s) thyme
1 red chili pepper seeded and dices
1/2 c sugar
FOR THE SOUP
4 15 oz cans black beans
1 large onion diced
1 Tbsp butter
2 c frozen corn
2 c ham cubed
salt to taste

Steps:

  • 1. For the broth Place the oil in a large pot. Saute the onion for 3 minutes. Add the garlic and saute another minute. Add the red wine and let most evaporate.
  • 2. Add the chicken stock and bouillon. Add the ham hocks and remaining ingredients. Bring to a boil and reduce heat to medium low and simmer for 2 hours. Strain the broth and discard the solids.
  • 3. Add butter to a pan and add the onion. Saute the onion until it is browned. Add the onion to the broth. Stir in cans of beans undrained. Add the corn and ham. Bring to a boil and reduce the heat and simmer 10 minutes. Season to taste with salt.
