Steps:
- Melt butter with olive oil over med heat. Add shallots, garlic, and pepper and saute for about 6-7 minutes until lightly browned. Pour cream into saucepan and simmer over med heat. Stir in the ingredients in the skillet, along with the tomato. Mix in the flour and black pepper and simmer until thickened, 5-8 minutes. Remove from heat and stir in Parmesan cheese. Allow to cool a few minutes before serving.
