GRILLED TUNA BURGERS WITH HOMEMADE REMOULADE image

remoulade sauce
1/2C mayonnaise
1 Tbsp fresh lemon juice
1 clove garlis, pressed
1 tsp fresh Italian parsley
1 tsp grated onion
1 tsp anchovy paste
2 hard boiled egg yolks
1/4 c extra virgin olive oil
2 Tabsp drained capers
burgers
1/4C olive oil
2 Tbsp tarragon vinegar
2 small bay leaves, broken
4 6 oz ahi tuna steaks about 1 in. thick
Non stick vegetable oil spray
4 4in square focaccia, split

Steps:

  • Sauce Whisk first 6 ingredients in bowl to blend. Using fine grater, grate in egg yolks. Whisk in oil then capers. Season with salt and pepper. Cover and chill. Can be made a day ahead. Burgers Combine oil, vinegar, and bay leaves in large resealable bag. Shake to blend. Add tuna. Seal bag. Turn. Chill 1-2 hours, turning bag occasionally. Spray grill rack with nonstick spray and prepare barbecue. Brush rolls with some of marinade. Grill rolls cut side down. Grill tuna until slightly charred, about 2 and 1/2 min per side.
