Grilled Texas Tequila Tuna image

Number Of Ingredients 7

1/4 cup tequila
1/4 cup red wine vinegar
2 tablespoons lime juice
1 tablespoon ground red chili pepper
2 cloves finely chopped garlic
1 red bell pepper, finely chopped
2 pounds fresh tuna (4 steaks, approximately 3/4 inch thick)

Steps:

  • In a bowl, mix all ingredients together except tuna. Place tuna in shallow dish. Pour marinade over. Refrigerate for 1 hour. Remove tuna from marinade and reserve liquid. Place tuna on grill over medium hot coals, turning once. Cook until done, 6-7 minutes per side. Heat marinade to boiling in saucepan. Cook until bell pepper is tender. Serve over tuna. Note: Alternative fish: swordfish and halibut.
