Grilled Stuffed Jalapenos image

A lighter version of the jalapeno pepper. Still has bacon, just not as much! And using half regular cream cheese and half light still gives you a rich taste! Two pepper halves have just 56 calories, so go ahead and enjoy!!

2 slice center-cut bacon
1/2 c cream cheese, softened (4 ounces)
1/2 c fat-free cream cheese, softened (4 ounces)
1/4 c extra-sharp cheddar cheese, shredded (1 ounce)
1/4 c green onions, minced
1 tsp fresh lime juice
1/4 tsp kosher salt
1 small garlic clove, minced
14 jalapeno peppers, halved lengthwise and seeded
cooking spray
2 Tbsp fresh cilantro, chopped
2 Tbsp seeded tomato, chopped

Steps:

  • 1. Preheat the grill to medium-high heat.
  • 2. Cook the bacon in a skillet over medium heat until crisp. Remove bacon from the pan, and drain on paper towels. Crumble bacon.
  • 3. Combine crumbled bacon, cheeses, and next 4 ingredients (through garlic) in a bowl, stirring to combine. Divide the cheese evenly and fill the pepper halves.
  • 4. Place the peppers, cheese side up, on a grill rack or grill grate coated with cooking spray. Cover and grill peppers 8 minutes or until the bottoms of the peppers are charred and cheese mixture is lightly browned. Place the peppers on a serving platter. Sprinkle with cilantro and tomato.
