Grilled Chicken with Herb Goat Cheese & Prosciutto image

4 - boneless skinless chicken breasts
4 slice(s) prosciutto
MARINADE
2 clove(s) garlic, minced
1 medium shallot, minced
1 - lemon, juiced and zested
1 tablespoon(s) dijon mustard
1/4 cup(s) white wine (Sauvignon blanc)
1/4 tablespoon(s) extra virgin olive oil
1 teaspoon(s) salt
1 teaspoon(s) pepper
GOAT CHEESE MIXTURE
4 ounce(s) goat cheese (room temperature)
1 - lemon juiced and zested
1 tablespoon(s) fresh thyme
1 tablespoon(s) fresh oregano
1 tablespoon(s) fresh rosemary
1/2 teaspoon(s) salt
1/2 teaspoon(s) pepper

Steps:

  • Preheat the grill to 400°F.
  • In a bowl mix together the ingredients for the marinade. Put the 4 chicken breasts into a gallon zip lock bag and add the marinade. Marinate for 20 minutes.
  • In a separate bowl, mix together the Goat Cheese Mixture ingredients and set aside.
  • Once the chicken has marinated for 20 minutes, remove from the gallon bag. Cut a pocket in the side of each chicken breast. Make sure you do not cut all the way through the breast. Put one slice of prosciutto in each chicken breast pocket and 1⁄4 of the goat cheese mixture. Use toothpicks to seal the cut side of the pocket.
  • Once your grill has pre-heated, put the chicken breast on the grill. Cook for 18-22 minutes, until chicken is completely cooked through. Serve warm at your next BBQ with friends and family, enjoy!
