The brining of the chicken in this recipe is an extra step, it's what gives this sandwich such great flavor. Along with sautéed grill apples and onions.

- 1. For Herb Mayonnaise: mix mayonnaise and herbs to gather in a small mixing bowl and place in refrigerator. Brine the chicken breast in the refrigerator for at lease 6 hours.
- 2. Once you remove chicken from brine , rinse off chicken and pat dry. Grill chicken until done. sauté onion and apples in olive oil until caramelize. remove and place in small bowl.
- 3. Place the rolls on a clean work surface and spread about 1 tablespoon of the Herb Mayonnaise on each half. On the bottom halves place the sliced chicken breast and add two slices of bacon and cheese.
- 4. Top with several lettuce leaves and 1/4 of onion mixture.close the sandwiches with top half of each roll and grill until warm and cheese has melted.
