GREEN PEPPERCORN SAUCE FOR STEAK image

Number Of Ingredients 7

1 T. olive oil
2 shallots, minced
2 T. cognac
1/2 cup heavy cream
1/2 cup beef or chicken broth
1 T. lightly crushed green peppercorns
1/2 t. arrowroot

Steps:

  • Heat in small skillet oil & shallots. Saute until golden. Add cognac & simmer 1 -2 minutes. Add cream & broth. Bring to a boil. Add peppercorns, reduce heat & simmer 2-3 minutes. sprinkle arrowroot until blended & thickened 2-3 minutes.
