GREEN BEANS OR ASPARAGUS IN ROASTED RED PEPPER SAUCE image

1 1/2 pounds green beans or Asparagus
1 (7-ounce) jar roasted red pepper, drained .
1 small clove garlic, peeled and finely minced .
2 teaspoons olive oil .
1 tablespoon lemon juice .
1/8 teaspoon salt .
Freshly ground black pepper to taste .

Steps:

  • 1. Trim the ends of the beans/asparagus and cut into halves or thirds. Bring a pan of water to the boil, add the beans and time 7 minutes. Drain and rinse with cold water to stop the cooking. 2. In a food processor or blender, combine the roasted peppers, garlic, olive oil, lemon juice, salt and pepper. Blend until smooth. 3. Put the sauce and beans into a pan over medium-low heat.
