Greek Spinach and Chicken Orzo image

This recipe was given to me by a neighbor. I love it and so does my family. A great hit at potlucks.

Number Of Ingredients 8

8 oz orzo (rice shaped pasta)
1 deli rotisserie chicken, skin removed, meat shredded
3 c fresh baby spinach
1 c (4oz.) crumbled feta cheese
1 large tomato, diced
1/2 c pitted kalamata olives
2 Tbsp olive oil
1/2 tsp salt

Steps:

  • 1. Cook orzo in large pot of boiling salted water according to package directions.
  • 2. Drain.
  • 3. Return orzo to pot.
  • 4. Stir in all remaining ingredients.
  • 5. Cook 2 to 3 minutes over medium heat or until heated through.
