Grated sweet potato pudding image

If you like sweet potatoes, you will love this pudding. My mother in law used to make it real often and I really enjoyed it. The texture is so different from boiled and mashed sweet potatoes. For enhancement add a dollop of vanilla ice cream or whipped cream. The potatoes can be grated using a hand grater or a food processor with a grating disk. Preheat oven to 375 degrees F.

4 - medium sweet potaoes peeled and grated
1 / 2 cup(s) sugar
1 / 2 cup(s) brown sugar, firmly packed
1 / 2 stick(s) margarine
1 cup(s) milk
4 - eggs
1 teaspoon(s) allspice, ground
1 / 2 cup(s) self rising flour
1 teaspoon(s) vanilla extract

Steps:

  • Grate sweet potatoes and set aside
  • melt margarine, add sugars, flour, milk, eggs, vanilla and allspice. Mix until smooth. Add grated potatoes and stir until well mixed.
  • Pour mixture into a lightly greased (pam works well) earthenware bowl.
  • Bake for approximately 90 minutes at 375 degrees F.
  • remove from oven and serve while still warm. Can reheat later if needed.
