Grandma's Applesauce Bread image

Grandma Carr made quick breads and enjoyed them, especially for breakfast, year round. The flavor depended on what she had on hand but all of them were good! Here's her applesauce version.

2 c flour
1/2 c brown sugar, firmly packed
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c pecans or walnuts, chopped
1 1/2 c applesauce, unsweetened
1 egg

Steps:

  • 1. Pre-heat oven to 350 degrees. Grease an 8 by 4 inch loaf pan. Put flour, brown sugar, cinnamon, baking powder, baking soda and salt in the bowl of a mixer and beat on low just to combine.
  • 2. Add the applesauce and egg. Mix briefly to combine but do not mix for more than a minute or so. Stir in the nuts by hand. Pour into the prepared loaf pan.
  • 3. Bake for 45 - 50 minutes at 350 degrees. Cool in pan on a rack for 20 minutes, then remove from pan and let cool completely.
  • 4. NOTE: I recently made this recipe with blueberry flavored applesauce and it was awesome. I plan to try the peach or raspberry flavors, too. :)
