Grandma Shirley's Chicken

Number Of Ingredients 9

6 pieces Chicken Cutlets
1 cup Seasoned Bread Crumbs
2 Eggs, beaten
22 ounces Chicken Broth
1 cup White Wine
1 tablespoon Flour
1 pound Sliced Mushrooms
1 pound Shredded Mozzarella Cheese
5 cloves Chopped Garlic, Onion, &/or Shallots

Steps:

  • Soak Chicken Cutlets in 2 beaten eggs with small amount of water.
  • Coat Cutlets with Seasoned Bread Crumbs.
  • Brown well in butter & oil.
  • Remove cutlets from pan and place in large baking dish.
  • In the fry pan, brown chopped garlic, onion &/or shallot in a little oil.
  • Add Chicken Broth, White Wine and Flour. Cook to thicken.
  • Pour the sauce over the Chicken Cutlets.
  • Add the Sliced Mushrooms to the baking dish.
  • Cook for 45 minutes in a preheated 350 degree oven.
  • Sprinkle Mozzerella Cheese over the Cutlets.
  • Bake until melted.
