Grandma Meehan's baked rice pudding image

My grandmother had 11 kids- that is 13 mouths to feed if everyone was home. She was a frugal cook and my Dad said that if you could make a good meal out of nothing, like she did, then you were a good cook.

Number Of Ingredients 9

2 cup(s) real rice, cooked accoring to directions and let stand - add
1 cup(s) raisins
1/2 cup(s) sugar
1/2 teaspoon(s) nutmeg
1/2 teaspoon(s) cinnamon
3 - eggs or
3/4 cup(s) egg substitute
3 1/2 cup(s) milk
1 teaspoon(s) vanilla extract

Steps:

  • Cook rice, set aside until warm.
  • Toss with raisins. set aside.
  • Combine milok and eggs, mixing in a blender add vanilla, sugar and spices. Blend on med. until frothy.
  • Pour over the rice mixture. and bake at 300 degrees until set clear through, about 40 min.
