Grandma Alice's Fresh Apple Cake image

Years ago when visiting my sister's in-laws, we often were treated to this wonderful Apple Cake as Grandma Alice had a small orchard in her yard. What a joy it was to savor the wonderful aroma of baking apples when we arrived .... the kids who were very young at the time enjoyed it just as much as we did! I have cherished this...

1 1/2 c vegetable oil
2 c white sugar (can use a bit less if your apples are sweet)
2 eggs (i use egg substitute and it works great!)
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon, ground
1 tsp vanilla extract
2 1/2 c all purpose flour
1 c chopped nuts (pecans or walnuts work best!)
3 c chopped apples - peeled and cored (any type will do- you can even add a few more if you have them already chopped!)
6 oz butterscotch chips

Steps:

  • 1. Mix salad oil and sugar together in a mixer and add eggs or egg substitute until they are well-blended and light yellow in color, add vanilla. In a separate bowl, combine dry ingredients: baking soda, baking powder, salt, cinnamon and flour. Add chopped apples alternately with flour mixture and finally nuts if desired. Pour in 9X13 inch glass baking dish that has been sprayed with vegetable cooking spray. Sprinkle butterscotch chips evenly over the top before baking.
  • 2. Bake at 350 degrees for 50 minutes or until toothpick comes out clean. (If using Demarle bakeware, allow to cool for 15-20 minutes before turning out on a cake plate. This cake needs no frosting, it's moist and delicious!
