GOOD SEASONS CHICKEN image

Number Of Ingredients 7

2 pounds boneless skinless chicken, cut into bite size pieces
1 pound of mushrooms (white or baby bella), sliced
1 14 ounce can of artichoke hearts
1 package Good Seasons salad dressing mix, prepared per directions
2 cups breadcrumbs (plain or seasoned)
2 beaten eggs
1/2 cup canola oil (for pan frying chicken)

Steps:

  • Preheat oven to 350 degrees Beat te eggs Dip chicken pieces in egg, then bread crumbs. Heat oil in large saute pan until hot and then add chicken in batches, if necessary. When they are golden, transfer to a 9x12 baking dish. Drain the artichokes and sprinkle with mushrooms over chicken. Shake dressing and pour over the chicken mixture. Place in pre-heated oven for 30 minutes or until bubbly and chicken is cooked through.
