Ingredients for Shortcrust Pastry :
190g Plain Flour
23g Castor Sugar
15g Custard Powder
140g Butter
Iced water
Ingredients for Filling :
250g Castor Sugar
270g Golden Syrup
45g Butter, melted
170g Pecan Nuts, lightly toasted
3 nos. Eggs, lightly beaten

Steps:

  • To Prepare Pastry : 1. Preheat oven to 200 degree Celsius. 2. Measure and sieve all dry ingredients into a mixing bowl. 3. Rub butter into flour mixture till it resembles breadcrumbs. 4. Add in sufficient iced water to form a soft dough. 5. Wrap in plastic and refrigerate for 30 minutes. 6. Roll out dough to about 0.5cm thickness to fit a 23 cm (9 in.) loose-bottom pie tin or springform tin. 7. Prick base and sides with fork. Bake blind for 10 minutes ot till golden in colour. To Make Filling : 1. Mix sugar, golden syrup and butter in a bowl. Add in pecan nuts and eggs. Pour into pre-baked pie shell. 2. Reduce oevn temperature to 160 Degree Celsius and bake pie for 50 minutes or until a rich brown colour. 3. Serve sliced with vanilla Bean Ice Cream or Cream.
