Golden Tomatillo Salsa image

This is a colorful version of Tomatillo salsa

Number Of Ingredients 9

1 1/2 lb tomatillos, fresh
2 fresno peppers
1 habanero pepper, fresh
3 clove garlic
1/2 tsp sugar, sugar substitute can be used, adjust amt accordingly
**handful of cilantro
**couple squirts of lime juic
**salt to taste
**water

Steps:

  • 1. Remove husks and wash tomatillos. Cut in half and lay on baking sheet. Add fresno and habanero. Place garlic, skin on inside a small piece of foil and fold foil in half.
  • 2. Roast veggies under a low broiler for 7-10 min or until nice and charred.
  • 3. Allow to cool, remove skins from garlic, place veggies in food processor, add sugar, lime juice and cilantro. Puree, add a little water to thin out if desired. Add salt to taste.
