GNOCCHI WITH CHICKEN,SUNDRIED TOMATOES AND PINE NUTS image

Number Of Ingredients 9

1/2 cup chopped drained oil packed sun-dried tomatoes. (3 T oil reserved)
4 small skinless boneless chicken breast halves.
2 lbs gnocchi pasta
4-6 garlic cloves-minced
3/4 cup chopped fresh basil
1 cup canned chicken broth
1/2 cup chopped Prosciutto (approx 3 oz.)
1/3 cup pine nuts,toasted
Parmesan cheese

Steps:

  • Heat 2 Tablespoons oil from the Sun Dried tomatoes. Saute chicken breasts, cool and cut into 1/2" pieces. Heat remaining 1 T oil and saute garlic for 1 minute. Add sun dried tomatoes,chicken,basil,broth and prosciutto and bring to a boil. Cook gnocchi in boilins salted water until it floats to the surface approximately 3-4 minutes, drain and toss with the sauce. Top with pine nuts and parmesan cheese
