How to make Gluten-Free Tropical Fried Rice

Steps:
- In a small bowl, whisk together all sauce ingredients until well combined. Set aside.
- Heat a wok or large skillet over medium-high heat. Add oil and heat until it shimmers. Add beaten eggs, if using, and cook just until set, about 1 minute. Remove from wok and chop into bite-size pieces. Set aside.
- Place carrots and onions in hot wok or skillet and sauté 2 to 4 minutes. Add 3 cups cooked rice, breaking up clumps with a spatula so rice heats evenly.
- Stir in Lime-Soy Sauce to coat rice mixture.
- Add peas, green onions and pineapple, stirring gently to combine. Cook about 3 to 4 minutes. Stir in cooked eggs, if using.
- Sprinkle fried rice with cilantro. Serve hot or at room temperature.
