Steps:
- 1. Preheat oven to 425*. In large bowl, whisk together apricot preserves, oil, vinegar, garlic powder, salt & pepper. Add Brussels sprouts, onion & bacon; toss until evenly coated.
- 2. Spread vegetable mixture on ungreased baking sheet. Roast until Brussels sprouts are tender and lightly browned, about 20 minutes.
