Gingered Asparagus image

This is a nice way to prepare asparagus for a nice change of pace. From the cookbook Delicious Ways to Control Diabetes.

Number Of Ingredients 7

1 lb asparagus
cooking spray
2 Tbsp low sodium soy sauce
2 tsp sesame seeds, toasted
1 tsp fresh ginger, minced
1 dash(es) pepper
1/2 tsp orange rind, grated

Steps:

  • 1. Snap off tough ends of asparagus. Remove scales from stalks with a knife or vegetable peeler, if desired. Cut spears into 2-inch pieces.
  • 2. Coat a large non-stick skillet with cooking spray. Place over medium-low heat until hot.
  • 3. Add asparagus, soy sauce, sesame seeds, ginger, and pepper.
  • 4. Saute 5 minutes or until asparagus is crisp-tender.
  • 5. To serve, transfer to a serving bowl, and sprinkle with orange rind.
