GF BANANA BREAD image

I made this today with my own blend of GF flours. The recipe was originally on the bag of flour that I bought. The family said it was delicious; even though they can eat wheat flour! Success!

1/3 cup(s) oil-i used vegetable
2/3 cup(s) brown sugar, firmly packed
2 large eggs
1 teaspoon(s) vanilla
1 3/4 cup(s) all purpose gluten free flour (recipe follows)
2 teaspoon(s) baking powder
1 1/4 teaspoon(s) cinnamon
1 teaspoon(s) xanthan gum
1/2 teaspoon(s) salt
1 1/2 cup(s) banana, mashed
1/2 cup(s) walnuts or pecans
1/2 cup(s) chocolate chips or raisins
GLUTEN FREE FLOUR MIX
1 cup(s) white rice flour
1 cup(s) sorghum flour
1 cup(s) tapioca flour
1 cup(s) cornstarch
1 cup(s) almond or coconut flour

Steps:

  • For GF flour: Mix all flours together thoroughly and store in an airtight container in the refrigerator. Whisk together again to fluff before measuring.
  • For bread: Preheat oven to 350F. Grease 8x5 loaf pan with spray grease.
  • Cream together oil, sugar, eggs and vanilla in a mixer bowl.
  • In another bowl mix together the flour, xanthan gum, salt, baking powder and cinnamon.
  • Mix the flour mixture into the sugar mixture alternatively with the mashed banana. Beat until smooth.
  • Stir in nuts and raisins or chocolate chips. Transfer to baking pan and bake for 1 hour.
