Number Of Ingredients 16

1 pound dried brown lentils, rinsed and drained
10 cup beef broth
1 (14-ounce) can fire-roasted diced tomatoes
1/2 pound grated carrots
2 stalks celery, chopped
2 tablespoon minced garlic
1 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce
1 bay leaf
1/2 cup fresh parsley, chopped
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon nutmeg
2 cup cubed kielbasa
1 tablespoon red wine vinegar
Salt and pepper (optional)

Steps:

  • Place the lentils in a 6-quart slow cooker with the broth, tomatoes, carrots, celery, garlic, Worcestershire sauce, hot pepper sauce, bay leaf, parsley, garlic powder, pepper, and nutmeg. Stir to combine. -- Add in the kielbasa and mix. -- Cover and cook for 4 to 5 hours on high or 8 to 10 hours on low until the lentils are cooked. -- Add in the red wine vinegar. Add salt and pepper, if desired. Remove the bay leaf, ladle into bowls, and serve.
