12 oz tomato juice
1/2 c water
1 beef bouillion cube
1 large tomato, choped
3 T finley chopped scallions
2 T finely chopped green pepper
1/4 c finely chopped cucumber
1 T olive oil
2 T red wine vinegar
1 t. Worchestershire sauce
1/8 t Tabasco
1/2 to 1 c garlic flavored croutons
Salt and pepper

Steps:

  • Ahead of time: 1. Heat tomato juice and water in saucepan. Stir in bouillion cube until dissolved. Remove from heat, add remaining ingredients, except vegetables. Stir well and chill. 2. Prepare garnishes: 1/4 c each of finely chopped cucumber, tomato, green peppers, and scallions. 1/2 to 1 c. garlic flavored croutons. 3. Wrap and refrigerate vegetable garnishes. At Serving Time: 4. Put soup through blender if you want a smooth texture or serve, as is, in chilled bowls. Set out small bowls of garnishes.
