Garlic Sauteed Spinach image

I used to hate cooked spinach (esp. from a can- yuck!) but wilting fresh spinach with a bit of garlic is a whole different ballgame!

Number Of Ingredients 8

8 oz baby spinach leaves
2 tsp olive oil
2 clove garlic, minced or thinly sliced
1/2 tsp kosher salt, or to taste
1/4 tsp black pepper, or to taste
1 tsp butter
lemon juice to serve
salt and pepper, to taste

Steps:

  • 1. If spinach has not been washed, wash to remove any grit. Pat dry with paper towels.
  • 2. In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned.
  • 3. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes.
  • 4. Uncover the pot, turn the heat on high, and cook the spinach for another minute. Keep stirring until all the spinach is wilted. Place into a serving bowl and top with the butter, a couple squeezes of lemon, and a sprinkle of sea salt. Serve hot.
