GARLIC GINGER SHRIMP image

1 lb. peeled, deveined shrimp
4 tbs. low sodium soy sauce
3 tbs. hoisin sauce
2 tbs. olive oil
6 large garlic cloves
1-2 in. slice of fresh, peeled ginger

Steps:

  • Toss the shrimp, soy sauce and hoisin sauce in a bowl. Set aside. In a large saute pan squeeze the garlic through a garlic press into the pan - cut the ginger into small pieces and press it in the garlic press as well until the ginger juice and some of the softer ginger comes out. Discard the fibrous remains of the ginger left in the press. Add the olive oil and saute the garlic and ginger in the pan just until fragrant -about 1-2 min. on med. low heat. Add the shrimp and cook gently on med. heat until the shrimp is about halfway cooked. Toss, cover and remove from heat. Add pepper to taste. Let sit while you prepare the plates with salted rice and edamame - spoon 6-8 shrimp over rice and top with sauce.
