Frosted Cashew Cookies image

I got this recipe at a cookie exchange several years ago and they are delish!

Number Of Ingredients 10

1/2 c butter, softened
1 c brown sugar, packed
1 egg
1/2 tsp vanilla extract
3/4 tsp baking powder
1/4 tsp salt
3/4 tsp baking soda
1/3 c sour cream
1 3/4 c salted cashews, divided
2 c flour

Steps:

  • 1. Cream butter and brown sugar until fluffy. Beat in egg and vanilla. Add dry ingredients, alternating with sour cream; mix well. Fold in nuts, reserving some for the top of frosting. Bake at 400 degrees for 10 minutes on a greased baking sheet. Frost and top each cookie with a cashew. Yields: 4 doz.
  • 2. Frosting: 1/2 c. butter, 3 T. cream, 1/4 t. vanilla extract, 2 c. powdered sugar. Lightly brown the butter in a pan. Remove from heat and add cream and vanilla. Gradually stir in powdered sugar. Beat until thick. DECADENCE!
