Steps:
- 1. Break eggs into small bowl and lightly beat. Set aside. Preheat oven to 350ºF.
- 2. Spray cooking spray into oven-safe skillet. Add veggies and bacon bits. Saute on med-hi heat until soft. Add eggs. Cook until bottom is set.
- 3. Transfer skillet to oven. Bake for 8-10 minutes until eggs are set. Carefully remove hot skillet and sprinkle egg mixture with parmesan.
- 4. Serve with halved grape tomatoes.
