FRISEE SALAD image

Number Of Ingredients 6

1 bulb fennel
1 small head frisee
1/3 cup crumbled blue cheese (or to taste)
1/4 cup dried apricots, sliced thinly
olive oil for drizzling
salt and freshly ground pepper to taste

Steps:

  • Cut the fennel bulb in quarters, core, and thinly slice. Arrange on serving plates. Tear frisee into bite-sized pieces and arrange over the fennel. Sprinkle the blue cheese over the salads and top with sliced apricots. Drizzle olive oil over all and add a bit of salt and freshly ground pepper. Serve.
