These rank right up at the top of the list of my favorite foods that are so NOT good for me, but are SO good tasting.

Steps:
- 1. Place flour, salt and pepper into 1 gallon size plastic zipper bag and shake well to mix spices into flour Whisk eggs and milk together until well blended in medium sized bowl Place cracker meal in medium sized bowl Set a serving platter beside bowls for quick use
- 2. Peel and slice the onions horizontally 1/8" to 1/4" thick Separate each slice into individual rings Set cooling rack over cookie sheet covered with paper towels (to catch excess oil)
- 3. Pour enough peanut oil into deep fryer or deep heavy sauce pan (I use my wok) until oil until pan is about 1/4 to 1/2 full Turn heat to medium high
- 4. Put onion rings into flour mixture and close bag, then shake thoroughly until rings are completely covered with flour ***Do not overcrowd bag, do in batches if necessary Remove rings from flour mixture one at a time and dip in egg and milk mixture Then roll ring in cracker meal and place in serving platter When you have all the onion rings coated, the oil should be hot enough to start cooking ***Do not overcrowd the oil, cook several batches if necessary
- 5. Using a slotted spoon or strainer, place the rings in the hot oil a few at a time until you have as many rings as can cook easily without crowding. ***BE CAREFUL, AS THE OIL WILL BUBBLE UP WHEN YOU PLACE THE RINGS IN IT*** Cook until golden brown (about 2-3 minutes), turning once as necessary Remove from oil with slotted spoon or strainer and place on cooling rack to drain
- 6. Best served immediately while still hot. Very good with hamburgers, barbecue or just about anything (in my opinion)
