FRESH VEGETABLE APPETIZER PIZZAS image

An appetizer for the Mediterranean healthy lifestyle. A quick & easy method for chopping vegetables is using a Vidalli Chop Wizard or a Cuisinart food processor. RECIPE: Coutesy of Betty Crocker.

Number Of Ingredients 7

1 1/4 cup(s) finely chopped assorted fresh vegetables (broccoli, carrots, red onion, yellow summer squash, red bell pepper, mushrooms)
1/4 teaspoon(s) salt
- dash of pepper
1/4 teaspoon(s) grated lemon peel
4 - 5 ounce(s) one container garlic-and-herb spreadable cheese (option: soft cream cheese spread with onions & chives)
5 - whole-wheat flatbreads (6-inch) or pita breads. (option: artisan flatbreads-flatout/foldit, 9 oz. pkg.)
1/3 cup(s) finely shredded sharp cheddar cheese

Steps:

  • In small bowl, place vegetables. Sprinkle with salt, pepper and lemon peel. (NOTE: Be sure to rinse & spin your vegetables before chopping.)
  • Spread 2 tablespoons spreadable cheese over each flatbread. Top each with 1/4 cup vegetable mixture. Sprinkle with Cheddar cheese. Cut each into 6 wedges.
