Fresh Peas and Prosciutto image

1/4 cup olive or vegetable oil
1/3 lb prosciutto or deli-style ham slices, chopped (1/3 cup)
1 small onion, chopped (1/4 cup)
2 lb fresh green peas, shelled*
1/2 cup chicken broth
1 tablespoon sugar
1 tablespoon chopped fresh parsley
1/4 teaspoon salt

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Cook prosciutto and onion in oil, stirring frequently, until onion is tender.
  • Reduce heat to medium. Stir in remaining ingredients. Cover and cook about 10 minutes or until peas are tender.
