My Aunt always made this pie...I prefer it over a baked peach pie...I think it's because you can really taste the peaches in their fresh state... Enjoy!

Steps:
- 1. In a medium saucepan, mix the corn starch and sugar together. Add the water and whisk until thoroughly incorporated. Add the corn syrup. Bring this mixture to a boil, then turn heat down and simmer until clear and thickened. Stirring frequently. Remove from heat and thoroughly blend in the jello. Cool this mixture, then you can either fold in the peaches or place peaches in cooled crust and pour mixture over top. I usually blend my peaches into the mixture and then pour into crust. Chill until set. Note: I have also mixed 4 ounces of cream cheese with 1/4 cup confectioners sugar and spread in the bottom of pie crust, before adding the peach mixture...so good!
